I don’t know about y’all but I’m a huge fan of the winter holidays. Okay, I’m a fan of most holidays because I love decorating, baking and basically having an excuse to have fun. Christmas is hands-down my favorite holiday. I love giving gifts, baking and I really love holiday romances. I actually read them year-round, but there is always a guarantee of new awesome romance releases during November and December. Clearly I enjoy reading romance; watching two people find love against all odds is the ultimate escape. Combine that with another one of my favorite things—Christmas—and I’m all over it. This year I decided to put out my very first holiday romance: . In doing so I got to combine THREE things I love. Christmas, romance and a tattooed/pierced hero with a bad-boy image who is really a big softie on the inside!What’s your favorite thing about the holiday season? Since there can only be one winner I wanted to share something that everyone can use if they’re so inclined. This is a bourbon chocolate pecan pie recipe from my mom and let me tell you, this pie is to-die-for delicious!
What you’ll need:
1 cup white sugar
1 cup light corn syrup
1/2 cup butter (one stick)
1/4 cup bourbon
1 teaspoon vanilla extract
4 large eggs
1/4 teaspoon salt
1 cup semisweet chocolate chip morsels
1 cup chopped pecans
How to Prepare:
1. Preheat oven to 325 degrees F
2. In a small saucepan combine sugar, corn syrup, and butter. Cook over medium heat, stirring constantly, until butter or margarine melts and sugar dissolves. Cool slightly.
3. In a large bowl combine eggs, bourbon, vanilla, and salt. Mix well. Slowly pour sugar mixture (#2) into egg mixture, whisking constantly. Next, stir in chocolate chips and pecans.
4. Pour mixture into pie shell.
5. Bake in preheated oven for 50 to 55 minutes, or until set. Serve warm or chill. Optional: add a dollop of whipped cream when serving.
